La Caille, known for its elegant country French atmosphere and stunning grounds, has some surprises and exciting changes in store for patrons this year.

Local gastronomes will be delighted to hear of the recent addition of Executive Chef Billy Sotelo. Chef Sotelo, a winner of the Nicholas & Company Ultimate Chef Competition, earned his toque at the St.Regis Deer Valley, Fresco Italian Restaurant, Faustina, Oasis and the Grand America Hotel. Chef Sotelo will oversee the new one-acre kitchen garden, and take a lighter approach to the “French pantry” concept of authentic French country cuisine, allowing the flavor of the food to take center stage in traditional dishes. His passion for fresh foods, connection with local farmers, and emphasis on new menu creations will ensure the ultimate dining experience. La Caille’s setting is sensational. Ten full- time gardeners tend the 20 acres along Cottonwood Creek at the base of Little Cottonwood Canyon and manage the flock of peacocks, swans, ducks and chickens that roam the manicured grounds. In addition to the kitchen plot, flower gardens, ponds, and waterfalls, over three acres are devoted to vineyards of Seyval Blanc grapes, a white grape hybrid that produces well in Utah’s climate. La Caille recently procured a wine- producing license and celebrated their first grape harvest, so wine enthusiasts can look forward to sipping the release of an estate bottled vintage by early next year.

Event planners and brides-to-be will be excited to learn about the addition of the Chateaux as a venue available for special occasions. The Chateaux is reminiscent of Marie Antoinette’s private “Trianon” cottage at Versaille. “The layout offers a lot of flexibility,” says Director of Operations Wendy Caron. “It can accommodate 80 people for sit-down dining or up to 400 for cocktail receptions in its first floor rooms.” French Country decor is accentuated by carved woodwork, large fireplaces, floor-to- ceiling windows and French doors opening to patios overlooking the lush landscape.

If clients are renting the entire chateaux, two second-floor bedrooms and baths are available for overnight stays.

In the main building greenhouse twinkle lights entwined in tropical foliage add magic to large parties and events. For smaller groups, diners may settle in to the cozy bar with overstuffed sofas and fireplace, or walk through the multiple dining rooms, each featuring a fireplace, patios and gardens with views of the Wasatch Range.

No matter what the season or the celebration, La Caille offers an unparalleled experience and atmosphere. If you haven’t visited lately, it’s a wonderful time to return to La Caille.
