“First we eat, then we do everything else.” – M.F.K. Fisher aptly describes Italians’ view of life and their passion for one of the most popular cuisines in the world, food that leaves our bodies, minds and spirits nourished.

Italian cuisine dates back to the first century BC, when Apicuis created the first cookbook. With the discovery of the New World, the introduction of tomatoes, potatoes and bell peppers led to many innovations. The Roman Empire was infamous for its gastronomy, incorporating spices and ingredients from all over the world.

Italian dishes are known for their simplicity, blending four to eight ingredients, the focus is more on the quality of fresh, subtly spiced ingredients rather than fuss. It’s also very regional. From Milan to the northern border, the food reflects Germanic influences with spaetzle, stewed meats and risotto. Legend has it that Risotto alla Milanese was invented by workmen building the Milan Cathedral—while using saffron to color the stained-glass windows, they also added some to their rice. The central region around Bologna takes pride in tortellini and Bolognese Sauce. In the south, Naples lays claim to the invention of pizza and for incorporating seafood into pasta recipes.

There are hundreds of different shapes, types and sizes of pasta. Add that to the abundance of regional specialties and seasonal delicacies, it would take a lifetime to sample everything. Luckily for us, we have several Italian restaurants in Park City to satisfy your appetite Italiano!
